6 Helpful Resources for Healthy Eating

healthyI’ve been a vegetarian since 6th grade, and I’ve been cooking my own meals for many of the last 16 years. I would have to use the word ‘cook’ very loosely, as I started off my veggie years by microwaving a couple of black bean burgers for dinner. Over time, I started to look for more exciting recipes to ‘change it up,’ as there are so many meals you can eat, you just need a little inspiration from time to time. I have a number of amazing recipe and cookbooks (some shared below), and have used the internet to find a number of recipes that we use regularly, including The Forest Feast and Oh She Glows.

Not only do I peruse food blogs for main courses, but I also use a number of sites to find healthy vegan desserts. As I’ve mentioned before, my friend Mara of Hook, Thread and Tinker bought me Rawsome Vegan Baking for Christmas, and I’ve tried almost 70% of the recipes so far. It is amazing. McKenzie recently bought me Deliciously Ella‘s new cookbook, which I’m so excited to dig into. Her website is amazing, and I’ve already tried and fallen in love with her Banana, Pumpkin Seed and Almond Granola Bars.

The Forest Feast: My good friend, Brittany, recently bought me The Forest Feast cookbook for my birthday, and after oogling over it for ages, I’m so excited to own a copy. I love Erin’s website, filled with delicious recipes with categories like food, drinks, entertaining and traveling. Check out the website and buy a copy of the book!

Black-Bean-Beet Burger

I love black bean burgers (especially Adair Kitchen’s), and I love beet burgers (especially Tiny Boxwood’s). So the other day, I began to search the internet for the perfect black bean and beet burger. I found a number of recipes, but this one stuck out. I tried it. The burgers are heavenly. I made one swap – I replaced the rice for barley, and oat flour for quinoa flour. They still taste amazing. While I’m a full time vegetarian, Sasha only observes Meatless Mondays, so 3 black-bean-beet-burgers are packed in his lunchbox today. Pair them with whole wheat buns (for him), or bunless (for me), with a grilled veggie salad, and you’ve got the perfect meal.

Patties (makes 6):
8 ounces beets, steamed or roasted and peeled*
1 (15 ounce) can garbanzo beans, washed and drained
1 (15 ounce) can black beans, washed and drained
1/2 cup cooked brown rice
1/4 cup rolled oat flour**
1/2 red onion, diced
2 garlic cloves, minced
1 teaspoon sumac
1 teaspoon dried thyme leaves
3/4 teaspoon ground cumin
1/4 teaspoon ground coriander
Salt
Pepper

Pulse beets in a food processor until roughly chopped. Add beets to a large bowl, along with the garbanzo beans, black beans, brown rice, oat flour, red onion, garlic, sumac, thyme leaves, ground cumin and ground coriander. Mash with two forks until all the beans are incorporated. Salt and pepper to taste. (I added about one teaspoon of kosher salt and half of a teaspoon of pepper.)

Using a half cup measure, form six patties. Cover them with plastic wrap and transfer to the refrigerator to chill for 30 minutes. (Since we aren’t using egg to bind the mix, this step helps the patties hold together.) Melt butter or olive oil in a non-stick skillet. Toast the hamburger buns for 1-2 minutes. Remove and set aside. Add more butter or olive oil if needed. Add the patties and cook on both sides for 3-4 minutes and until the tops are lightly golden brown. Optional: Place slices of cheese on top of each burger and cook for 1 minute longer, until cheese is melted.

Burrata Cheese, Please

As mentioned here yesterday, I ate the most delicious burrata salad while in Fort Lauderdale on Saturday. The first time I ever ate this creamy, melt-in-your-mouth cheese was at our menu tasting. We chose that salad for the wedding, and numerous people commented on how amazing it tasted. Burrata is definitely a guilty pleasure, as it’s made with fresh mozzarella and cream. It sort of resembles an egg, which made me nervous at first, but after my first bite, I was sold. Sasha and I decided that we’re going to try the burrata dishes at the following amazing Houston restaurants. Some of these are even on my Best of Houston: Restaurants and Coffee list, while others we haven’t tried yet. I’m so excited for this endeavor. Have you ever tried burrata cheese?

In my yearning to be among the beauty of NYFW, I was scouring the IFB Conference site and saw the list of speakers, many of whom I hadn’t heard of before.
