5 Ingredient Raw Vegan Brownies

I am not a baker. But seriously, every vegan dessert I try fails (except these beet muffins – yum!). So when I came across a recipe for a simple, raw vegan brownie bite recipe, I jumped at it. I made some slight adaptations to the version I found online, and both Sasha and I love the result! These have five ingredients – raw cashews, organic honey, pitted/chopped dates, coconut oil, and unsweetened cocoa powder. They take five minutes to prepare (minus recommended refrigeration time) – and they are healthy-ish (no refined sugars!). Perfect tiny snack to fill your sweet tooth cravings!

Ingredients: 1 cup of plain cashews, 1 cup of pitted or chopped dates, 1/4 cup of unsweetened cocoa powder, 1.5 tablespoons of coconut oil, 2 teaspoons of honey

Step 1: Add 1 cup of raw, unsalted cashews to your blender and pulse until finely chopped

Step 2: Add pitted or chopped dates to cashew powder and pulse until completely mixed (should get kind of solid)

Step 3: Add 1/4 cup of unsweetened cocoa powder

Step 4: Add 1.5 tablespoons of coconut oil and 2 teaspoons of honey to the blended mixture – may have to stir with spoon vs. blend (depending on how strong your blender is!)

Step 5: Lay down stick-free parchment paper or aluminum foil and make into small brownie bites

Optional (but I recommend) Step 6: Add to fridge for an hour so the coconut oil hardens – then enjoy!

Casual Summer Days and Nights

With my due date only 15 days away, I’m doing something I haven’t done in 265 days… looking at regular clothing! No more maternity shopping for me (hallelujah, seriously!). I spent far too long the other day browsing through every single item at J. Crew – their summer collection is so dreamy. I am in love with this chambray tunic and these eyelet shorts. With Memorial Day weekend coming up, I thought I’d put together two outfits – one for brunching outdoors with friends and one for eating on the patio at night. I am so anxious to get back into my old clothes – can you tell? I want to wear both these outfits tomorrow! Is your wardrobe ready for summer? The Golden Nursery: Ready for Isla

Less than three weeks away from our due date now, and I am so anxious to meet little miss Isla. We had an ultrasound on Monday, and she is measuring 6 pounds 7 ounces – right on track (44th percentile). As we get nearer to June 4, we’re finalizing all baby details – making sure we have enough diapers, swaddle blankets, bottles, etc. for her arrival. The hospital bags (hers, mine) are packed and in the car – just in case! I’ll do a post on what’s inside soon. I have definitely overpacked her clothing – she has about 10 outfit choices… because I’m indecisive. This J. Crew onesie may be the winner, but we’ll see. The room is 99% complete. The only thing I’m still on the fence about is wall color/paper… Rifle Paper Co. will launch their wallpaper collection with Hygge and West next Monday. If something fits the room, I’ll be sold.

Met Gala 2014

My favorite fashion event (besides a royal wedding) is the annual Met Gala in NYC. I absolutely love the bold dresses that stars done for this big night out. I was following along on Instagram last night, and absolutely fell in love with some of my favorite star’s outfits. The nine pictures below are my favorites.
